Burger

Gormet Burger

Serves 8

Ingredients

• 1 red onion

• olive oil

• 1 teaspoon cumin seeds

• 1 teaspoon coriander seeds

• 1/2 bunch fresh flat-leaf parsley

• 800g good-quality beef mince

• a handful of freshly grated Parmesan cheese

• 1 heaped tablespoon English mustard

• 1 large egg, preferably free-range or organic

• 75g fresh breadcrumbs

• sea salt and freshly ground black pepper

• 8 burger buns

• toppings of your choice

Method

• Peel and finely chop the onion 

• Add a lug of olive oil to a frying pan on a medium heat 

• Pound the cumin and coriander seeds in a pestle and mortar then add to the pan

• Add the chopped onion and cook for about 5 minutes, stirring occasionally, until soft but not coloured, then leave to cool completely 

• Finely chop the parsley, including the stalks 

• Put the meat in a large mixing bowl and add the cooled onion and parsley

 Add the Parmesan, mustard, egg and breadcrumbs to the bowl with a pinch of salt and pepper 

• Get your clean hands in there and really scrunch and mix everything together 

• Divide your burger mix into eight equal pieces, then pat and shape each one into a nice fat burger - you want them about 8cm wide and 3cm thick

• Transfer to a tray, cover with clingfilm and pop in the fridge to chill for 1 hour 

• If barbecuing, light the barbecue after the burgers have been chilling for about 30 minutes so the flames have died down and it's ready when you come to cook (for further advice see the Setting up a barbecue, Barbecue cooking guide and Barbecue safety guide fact sheets)

• If using a griddle pan, put it on a high heat now to get screaming hot 

• Drizzle the burgers with a tiny bit of olive oil, then transfer them to the barbecue grill or griddle pan and cook for 10 to 12 minutes, or until cooked through, turning occasionally 

• While they're cooking, halve your burger buns and lightly toast them

• Serve your burgers in the toasted buns with all your favourite toppings - try ketchup, mayonnaise, chilli sauce, lettuce, finely sliced cheese, sliced tomatoes, raw rings of onion or any combination of the above
